The Australian winger has been a free agent since he was released from Liverpool at the end of last season following a five-year injury-ravaged spell at Anfield.
Galatasaray had announced a deal with Kewell on Thursday, and the 29-year-old has officially completed the deal.
Speaking at a news conference in Istanbul, Kewell is confident he has made the right choice for his career.
"I wanted to move on and I think this is the best way to move on," said Kewell.
"I'm excited, I'm thrilled to bits. I'm looking forward to the new challenge.
Kewell has been linked with Celtic, Portsmouth and Roma following his departure from the Merseyside, but revealed he was relishing the opportunity to play for the Turkish outfit.
"I can't wait to meet up with the team and to get going. It's something different," he added.
"There's a lot of talk about the Turkish league. It's coming up in the world and the national team has done well in the last couple of major tournaments.
"There's a lot of young talent here, and it's different, that's what I'm looking forward to - a new challenge."
